Manitowoc S Model freezing up

I have a Manitowoc S Model. The machine seems to be running fine but there are a couple possible issues that are causing it to freeze up. When I turn the machine on ICE, it will purge the water out of the reservoir and then fill the reservoir with new water. When it enters the freeze cycle, the evaporator gets cold and water is flowing over it and ice does form. I notice towards the end of the freeze cycle the reservoir seems to be running out of water. The water level probe light on the control board is off, so I assume water inlet value should let more water in but it is not. The freeze cycle is right at about 18 min and then it enters harvest. Right at the 3.5 min mark the machine goes back into freeze cycle and the ice just barely falls off. If the machine runs for a while, eventually the ice doesn't fall and the machine will freeze up at the next couple cycles.

To note: The evaporator looks clean and I don't see any calcium build up.

Should the water inlet valve add water whenever the water level is not touching the probe?
Is there anyway to increase the harverst time cycle?

Could the problem be that the water reservoir is running out of water during the freeze cycle? Does the harvest cycle use water to help release the ice?

I believe I solved the problem. I was loosing water from the reservoir because it was dripping out the curtain and rolling down the sides of the reservoir. So there wasn't enough water to make a full cube. After leveling off the unit to minimize the water loss and setting the correct ice thickness, the harvest was able to drop the ice. It has made ice all night. Hopefully it continues without issue until the bin is full.
