I posted something like this back a year or so ago...

But with alot of new members here, I thought I would throw out the old question again.

BEER!

How do you cook with it?

or

How many BEERS does it take to cook a ___________?
 
Beer can chicken is one of my favorites....and amazingly enough....I buy a 6 pack....use one for the chicken and by the time the other 5 are gone...the chicken is done!
 
Smoked ribs. 1 can in steamer pan. Other 12 or so for me. :D

Yeah, I try to make sure not to drink the whole 6 pack while BBQ is cooking.

Sometimes though it take that and a few more.
And at least one in the BBQ sauce. :D

Beer Braised Pork Butt

For the dry rub:
2 tablespoons salt
About 40 grinds black pepper
2 tablespoons chili powder
1 tablespoon garlic powder
2 teaspoons ground coriander
2 teaspoons ground mustard seed
12 ounces good ale or dark beer, such as Bass*
4 cloves garlic, chopped
1 5-pound pork butt (shoulder of the animal)

Combine rub ingredients in a bowl and mix well. Rub all over pork butt. Wrap in plastic wrap and refrigerate for at least one hour and as long as overnight.
Preheat oven to 500 degrees F. Unwrap pork and place in a roasting pan with sides about 2 inches high. Cook 45 minutes until dark browned and even blackening in places. Remove from oven. Lower oven to 325 degrees F. Pour beer over the top and add chopped garlic around the pork. Cover tightly with heavy duty aluminum foil or twice with regular foil. Poke about 10 holes all over the top of the foil. Cook pork butt 2 1/2 hours longer until so tender that it comes away very easily from center bone.
Place the meat on a plate and pour the pan juice (there will be plenty) into a saucepan. To the pan juices add:

1/2 cup ketchup
2 tablespoons whole grain Dijon mustard
3 tablespoons Worchestershire sauce
1/3 cup dark brown sugar

Bring to a simmer until reduced by half and thick, about 20 minutes.
While the sauce is boiling down, pull apart the pork with 2 forks. Pour the sauce over the pulled pork and work through until fully absorbed.


*Original recipe recommends Bass, I use an oatmeal stout or Spaten Optimator
 
Lamb shanks braised in Guiness stout (plus mirepoix vegs).

  • Brown the lightly floured shanks on high heat in canola oil, remove.
  • Brown the veggies. Add a tablespoon of tomato paste and let caramalize 2 minutes, stirring frequently to avoid burning.

  • Deglaze with one can or bottle of stout, one can of low sodium chicken broth.
Let alcohol boil off for a minute or so. Reduce to simmer.

    • Add meat back in.
  • Cover pot and place in oven to braise for 3.5 hours.
  • Remove shanks (meat will be falling off the bone.) Strain braising liquid.
  • Add liquid back to pot, let reduce even further, if necessary, to thicken. Use as gravy

Here is one I got from a Savannah cookbook . Everyone loves this in the morning.

Easy Beer Bread.

2 cups self-rising flour
12 oz. can of warm beer
3 tablespoons sugar
1 tablespoon butter, melted

Combine flour , sugar and beer; stir just until all ingredients are moistened. Pour into a greased loaf pan. Bake at 375* F. for 30 to 35 minutes. Brush with melted butter. Remove bread from pan and cool.

Up here in the mountains it takes 40-45 mins to bake.

Pop top on favorite beer, take a drink, put whole chicken s butt over can, cook on indirect coals. :cool:


my favotite beer comes in bottles so i have to rinse a pop can.:)

3 beers, couple seconds of vinegar, old bay and J.O. seasoning #2.

Beef-n-Beer

Wifey makes it real good!

(She determines her quantities--it's a mood thing):confused:
Dice up bacon and cook till crisp
Brown beef (Stew cuts)in bacon grease
Add bunches of red onion(till trans-you know what)
I don't think she adds any seasoning
Add the beer you'd normally drink
Simmer covered w/(squeak leak) at least 4 hours-- longer the better
Serve over egg noodles and add a sprinkle of red wine vinegar at serving
She usually serves a spinach salad and fresh green beans
And don't forget to drink the other 11 beers that are left:eek:
