True Cooler Humidity Problem In Beer Cellar

I recently purchased a True GDM 41SL-60 for my at home beer cellar. I have adjusted the cut in and cut out on the thermostat to be 48F and 59F respectively.

My issue is the humidity levels. I live in FL and am pushing 90+ % humidity inside the cooler and I am attempting to keep it in the 70s. Any ideas? I have added dehumidifiers with little success. I believe the refrigerant in the evaporator cools is so cold and the evaporator fan constantly running with ambient air in the 50s is causing the immense amount of moisture.

Any suggestions would be greatly appreciated. Thank you for your time and consideration.
If you want 50^F, with <70%RH, which is a 40^F dew point, the cooling coil must be <35^F. Slow the air flow through the coil to get to <35^F evaporator temperature. You had a bend the fan blades, which was good.
The rest of the advice does not start in direction but will help.

Add a heater to the coil,control it through a line voltage humidistat.

This is what chocolate box makers and even Norlake Scientific does but with a ADHRE, heaters, and refrigeration to achieve 20 to 25 % RH.
They do this after they get a cold cooling coil.
