The plastic tubing on the copper pipes is not a good idea. Plastic is somewhat of an insulator and will not transfer the heat into the refrigerant. It is more than likely going to cause compressor damage and inefficient operation. If this were mine, I would find a used hoshizaki ice machine. The evaporators are stainless steel. You can modify the pump pickup location pretty easily. You would have to bypass the controls, but thats not a big deal.
