As I understand most equipment is manufactured for a 70% SHR. What it actually does is more dependent on how it is installed and set up. The next factor will be grains of moisture, with 100% outside air that will be varying every hour, if not minute. The last piece of the puzzle is equipment size ie 10 ton will move twice as much air as 5 ton so assuming no other changes twice as much condensate. As far as the air leaving the coil it is usually determined by the application but designed by either an engineer or HVAC tech.
