Never more than 15psi for acetylene. Acet regulators are limited to levels below 15 because it's unstable above that ... meaning explosive. Oxygen usually about 40psi.
The handle valves are adjusted to give a carburizing flame (slight excess acetylene).

I set my acetylene for 5 psi and my oxygen for 20 psi. I could probably go lower with the O2 pressure.

Using higher pressures than that with the tips most people use just makes the flame harder to adjust properly.
